- Executive Chef, Kevin Nelson’s Thousand Year Breakfast Uses Only Ingredients Available To Man Before Modern Civilization
VAIL, Colo. – December 19, 2006 – Terra Bistro, long one of Vail’s finest dining experiences, announces the inception of the Thousand Year Breakfast. The Thousand Year Breakfast incorporates a philosophy on healthy eating strongly believed by executive chef, Kevin Nelson. Using only ingredients that were available to man prior to modern civilization is the keystone to the healthy sit-down breakfast served from 6:00-11:00 a.m. at Terra Bistro.
“Breakfast is the most important meal of the day,” says Nelson. “Simply put, our philosophy is that if the food items you are eating today were attainable naturally on earth before modern civilization and could be modified using natural means then you are eating well.”
Nelson believes that, in moderation, all foods natural to the Earth are healthy. By avoiding artificial ingredients including; nitrates, high fructose corn syrup, artificial colorings and artificial flavorings, to name a few, people can take the first step towards living well.
